Gluten Free Menu Swap – July 28

Oh, man!  What am I going to make this week?  Bah!  I, honestly, am not sure. My menu plan is much like this lighthouse – ONE mile AWAY from the water.  (Think I’m kidding?  Read this.)

And my menu plan?  AT LEAST a mile away from my brain and creativity.  You see, being the end of the month, this means reaching back in to the cupboards and figuring it out from there.  As I mentioned before, I menu plan after I peek at the contents of my fridge first.  This week is no different.

What makes this more interesting, however, is this:  I can easily see what I purchased because it either (1) looked good or (2) was on sale (like my 2 for 1 honeydew melons in the fridge now) and NOT because they were on a previous menu plan.  Are you seeing the problem yet?

Yes.  I have a fridge with orphaned veggies and fruit… and random other things.  And hardly a creative whimpering thought to be had.

Ah well.  Better get it together, right?

So what’s for dinner this week?  After a brief review of ideas (which are few and very, VERY far between tonight), here’s the “plan” (And yes, I’m using those quotation marks with great liberal abandon!):

Monday: Wild Rice and Ham Soup

Tuesday: Coconut Shrimp with Stuffed Bell Peppers

Wednesday: Lettuce Wraps OR Smoked Pulled Pork Sandwiches…or BBQ pork pizza?  I dunno!

Thursday: Red Chile Chicken Enchiladas with homemade corn tortillas

Friday: Chinese Homestyle Chicken and Rice
