Gluten Free Everyday Eats – Day 10
Plugging along. My order for Sister’s Baking Co granola arrived today (!!! Hello? Super speedy!). The package arrived at the same time my husband arrived home from work. We all sat around the kitchen table snacking on granola, white peaches and drinking some water. Needless to say my order is down one package (servings for 6….and 3 of us (mostly 2 of us) had *no* problem polishing it off. The rest of the packs have been stowed away or they would have been in jeopardy too. I have one set aside to put in the car console. I’m hoping it will last. 😀
My meals were pretty typical today (minus the polished off bag of granola with the family….). You can see I really need to work on getting the fruit and veg into my meals. I think I’m a produce snob. If it tastes great, you can’t stop me from eating it. If it is even slightly not-great? Meh. I’ll pass. Seriously, I need to get over this. 😀
Breakfast today for everyone was cereal. I had Cinnamon Chex. Weirdly enough, when I eat this cereal I find myself hungry within an hour or two for some bizarre reason. So even though I love it, it doesn’t hit my breakfast rotation often.
Lunch: Egg and veg scramble: Sugar snap peas, onions, garlic, red pepper strips and some eggs. Served with two Rudi’s tortillas (charred just the way we love them) and water. I also ate some grapes and blueberries -but just a couple handfuls.
Snack: Granola! Water and a couple slice of a white peach I cut up for the kids. A couple more grapes and blueberries.
Dinner: 3 Spam Musubi (or at least what this girl makes at home and calls “Spam Musubi” – I’ve never been to Hawaii but I have eaten it here (with wheat-free tamari) in a few restaurants. Hard to find the gluten free version, so I make it at home. It tastes so good! I also ate some “salad” (chopped up Romaine lettuce really) and a few grapes. Water all around.
Tomorrow we are off to pick up the girls new eyeglasses. I’ve never been more astounded by someone’s joy in all my life. I remember getting glasses and being teased as a kid. Now both of my girls will be wearing glasses. The youngest gets the pleasure of being one week away from her third birthday and sick to boot. But they are both rather curious and excited. I hope their generation is kinder than mine. It’s a little heartbreaking to know they need glasses but at the same time, what a relief, right? Now I know they will be seeing even better and if that is all we face? Eye glasses? Good grief! What a ridiculous worry in light of what others face daily.
After the eye doctor? We have some party planning. It’s My Love’s birthday tomorrow. No cake in sight nor even on the horizon. At least I bought some heavy whipping cream today. I will be able to do something with the million blueberries in the refrigerator? Maybe a blueberry pie for his party cake? Guess I will have to wait and see what I work out.
