Gluten Free Everyday Eats – Days 25, 26, 27, 28!
Oh my! I feel like the rug got yanked out from underneath my feet at the end of the week last week. Life became very busy and I not only forgot to take pictures of the food/meals I ate, but I didn’t even get a chance to log on to the blog to upload anything or post. Ah yes, such is life for all of us sometimes. Between playdates, summer camp, doctor appointments, MAJOR spring clearing/cleaning (in July…LOL), and birthday parties, life just moves on. It’s wonderful and fast, fast fast! I have a huge list of to-do yet to be accomplished before school starts up again in the fall.
So….. I might have to recreate my menus for you based on an app I’ve been using to track my calorie consumption (MyFitnessPal – do you use it?). I have been LOVING the fact that it contains MANY MANY gluten free menu items and modified foods. I can easily find my soy-no whip coffee or Rudi’s tortillas, etc. It rocks! (I have no affiliation with this app/site…..it was introduced to me by a girlfriend who uses it too.)
So…let’s figure out these meals:
Thursday, Day 25
Breakfast: Nothing (late for the day as usual!)
Lunch: Chicken & Cheese rolls (lunch meat rolled around a slice of cheddar cheese), apple and Greek yogurt.
Dinner: (Take out/Wendy’s) Baked potato with chives (no sour cream/no butter), water and a white peach.
Snack: Late night (obviously, dinner was not enough!) Maple Sugar & Chile Popcorn (yum!)
Friday, Day 26
Breakfast: Scrambled eggs & Rudi tortilla, coffee
Lunch: White peach, grapes, lettuce wrap sandwich (chicken, cucumber, ranch dressing), water
Dinner: Cabbage Slaw (found a Cat Cora recipe….wasn’t out thing, but worth trying!)
Snack: Yellow peach and raspberries with Greek Yogurt
Saturday, Day 27
Breakfast: Goat cheese with Sweet Thai Chili Sauce, apple slices and gluten free crackers
Lunch: Chicken & shrimp teriyaki with rice & veggies
Dinner: Strawberry Salad
Snack: None
Sunday, Day 28
Breakfast: Nothing – we were racing out the door for a birthday party!
Lunch: California sushi hand roll x 2
Dinner: Sausages & eggs, apple slices
Snack: None
Well – now I hope I can manage to stay on track for the last couple days of this month! I just pulled a fresh loaf of bread out of the oven (Honey & Quinoa Flake) that smells divine. I might just have to cut a slice for my snack. If it tastes as well as it smells, I will be in heaven!
